Yummy Radishes

Not much of a Radish fan, BUT I found they have lots of nutrients in them!!  You receive more nutrients when you eat them raw, but I was looking for a way to get my kids to eat them and well raw just wasn’t an option.  So I thought????  Radishes are a root veggie so why not roast them like I roast beets and carrots!!  So I cut them in half and added them to a mix with onion and carrots and told my kids they were tiny red potatoes 🙂  It worked and they loved them…  Root veggies are good for detoxing your body.  I’m trying to make this dish a weekly staple at the dinner table.

1 lb bag of radishes (rinsed and cut in half)

1 lb bag of carrots (rinsed and cut into 1″ pieces)

1 large onion (peeled and sliced)

Throw all ingredients into a mixing bowl add in 1 T coconut oil and mix well.  Add in 1 t sea salt and black pepper and toss.  Place all ingredients in a roasting dish and cover.  Roast on 350 for 45 minutes.

Organic veggies are best and you can really use any seasoning of choice.
