1 day left!!  Crazy to think that 3 weeks ago I thought this was going to be a long 3 weeks….it was, but I made it and I have a new found understanding of what I already knew about myself ~ “whatever I put my mind to, I will accomplish!”


Breakfast, Vegan Chocolate ShakeO with frozen Strawberries

Lunch, Hearty Veggie Miso Soup

Dinner, Asian Stir Fry and Braised Greens

I’ve been sneaking a tablespoon of Cashew butter most nights after dinner….it’s so creamy and yummy and I’ve been needing a little something else at the end of my day.  Some days I eat it with a green apple, but some I just grab a scoop and enjoy 🙂
