What you need:
1 t EVOO
¼ onion, chopped
1 large rib of celery, chopped
½ green bell pepper, chopped
1/3 c cooked quinoa
½ c cooked and shredded chicken
1 T hot sauce (like Frank’s)
What you do:
Heat the oil in a pan over medium. Sautee all veggies for about 5 minutes. Combine all ingredients in a bowl, mix and serve warm.
